Nicole is a thirty-something Utah woman who lives with her loving husband and takes care of their three children. Nicole is also blind.
Though Nicole is a stay-at-home mom who cares for three kids in total darkness, her blindness doesn’t keep her from her passion: cooking. While Brandon is at work, he finds ways to fuel Nicole’s passion, like finding ingredients in the kitchen via video chat. He acts as her eyes, describing their growing children as they experience the world around them.
Nicole hasn’t always been blind. She lost her vision in 2001, just one year after her wedding. When she began to notice frequent headaches and slurred speech, an MRI revealed a deadly bacteria attacking her brain. Nicole was in a coma for two weeks when suddenly, she woke up and began walking. Six months later, the bacteria was back, and this time it took her eyesight. She and Brandon never gave up on their plans to have children and build as normal a life as possible. “I made the decision that I would not allow my disability to get in the way of my happiness,” she says. Cooking, and sitting down at the dinner table with her family, supplies her with happiness and sense of normalcy. Doctors call Nicole a walking miracle.
With her cooking blog, Nicole also inspires thousands of moms around the world. Brandon helps by typing her thoughts on the computer. “I try to share my story and testimony as much as I can,” she says. “I feel that it has given me an amazing opportunity to help others who are going through trials and hardships. I also love to share my love of cooking with other mothers.”
